Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup diced butternut squash
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Cook Quinoa: In a pot, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until all the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.

Roast Vegetables: In a roasting pan, combine the onion, garlic, bell pepper, zucchini, and butternut squash. Drizzle with olive oil, and sprinkle with thyme, sage, salt, and pepper. Toss to coat. Roast in the oven for about 25-30 minutes, or until vegetables are tender and lightly browned.

Combine: In a large bowl, mix the cooked quinoa with the roasted vegetables. Add the dried cranberries and nuts (if using). Adjust seasoning with more salt and pepper if needed.

Serve: Garnish with fresh parsley before serving.

This dish is not only delicious but also packed with nutrients. The quinoa provides a great source of protein, while the variety of vegetables adds essential vitamins and a delightful crunch. The cranberries offer a hint of sweetness, and the nuts add a nice textural contrast. It's a great stuffing alternative for those looking for a vegetarian or healthier option. Enjoy!
